I've been searching for a couple hours now and i'm trying to find the years and models of what gas tanks I can use in my 84 cutlass gbody.

So far I have

1987 Monte Carlo 4.3

What other years can i use and what years of GN can I use?

Pretty much the monte TBI 4.3, 87,88, maybe 86 too, N, Turbo regal, T-type etc. The Elco s a different tank, the wagon is a different tank. Rock Auto has Brand new tanks for pretty cheap. Keep in mind you'll need to either get a FI sender pump hanger assembly, or get a pump and mod your own.

My question is when you are changing fuel tanks, do they have to be baffled fuel tanks?
I want to do the LSx engine swap and I don't want to buy the wrong tank or anything.

Well, the monte's and elky's cam with FI, and the have some "baffling". But yeas, the talk should be baffled, or, you should adapt the later model fuel pump assembly with the pump submerged in it's own "well".
