Is the sealer on the door hinge plates in the door jamb itself (what the hinge bolts to) the same as the rest of the seam sealer used on the body? I would like to clean/redo that area on the body before I put the doors on.

I've removed that stuff before and it was always very stiff and brittle.i think at one time it was meant to be pliable like seam sealer, but it may have been lacquer based then so that would be why it's so poor quality as time goes on.the idea behind that sealer is to keep moisture out of between those two parts,I've replaced it with the urethane seam sealer, works for me.

I remember when I was into wooden boats many years ago, we used what was called "bedding compound" to put under hardware, cleats, etc. It was meant to keep moisture, etc out.
I'm sure it could be used behind the hinges.
If you notice, the factory didn't bother painting behind the hinges between the hinges and doors, or hinges and hinge posts. Now is a good time to correct where GM cut corners.
